THE EXCLUSIVITY AND GREAT PRESTIGE OF OUR WINES ARE DUE TO :
* Old vines over 30 years old and also single vineyards in Spain more than 90 years old.
* Each vineyard is planted using the natural "en vaso" or "gobelet" system. The harvest is done totally by hand, caring for each bunch of grapes as if it were "pure gold".
* Very low yields, between 1,500 and 3,800 kg. per hectare. This means a very low volume from each plant in the vineyard and therefore high quality grapes.
A UNIQUE AND ORIGINAL CONSTRUCTION
All the building work at Valduero has been carried out by its president, Gregorio García, an industrial engineer. A very original work, with three tunnels excavated in the side of a hill and a surface area of 4.200m2, maintaining a natural and constant temperature and humidity throughout the year.
IN THE FIRST TUNNEL: FERMENTATION OF THE GRAPES.
We carry out fermentation using the most modern technology. Grapes are crushed and then fermented in stainless steel vats, which maintains all the primary aromas of the grapes. The stainless steel vats are of low capacity, allowing the fermentation of individual and different "coupages". Now, some pictures of the tunnel vats.
THE SECOND TUNNEL: OAK AGEING
We age the wines in the best and most exclusive European oaks. We have over 3.800 barrels of the most exclusive oak, personally selected by Yolanda. Yolanda ages all of her wines using a minimum of three different types of oak, making an art of ageing this is a special "secret" known only to her. Some of our wines are aged in more than five different types of oak for more than three years. Now, some pictures of the barrel tunnel.
THE THIRD TUNNEL. BOTTLE AGEING.
One of the secrets of our wines, which makes them of the same standard as those of the top French chateaux, is our specialization in excellent and older vintages, as well as the patient and long ageing of the wines.We now show the bottle racks where our wines rest for years, acquiring the elegance and harmony of a great "chateau".
